Banana Bread

Ingredients:
2 cups all-purpose flour (I usually use wheat flour and it turns out just as yummy)
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
1/4 tsp salt
2 beaten eggs
1 1/2 cups mashed bananas (5 medium ripe bananas)
1 cup sugar
1/2 cup veg. oil
1/4 cup chopped walnuts (optional)

Combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix together in a large bowl and set aside.

In a medium bowl, combine eggs, bananas (mash bananas before adding them), sugar, and oil. Mix together and add all at once to flour mixture.

Stir just until moistened (batter will be lumpy). Fold in nuts (if you desire nuts in your banana bread...I usually don't :)

Spoon batter into greased bread pan(s)...(makes 1 large loaf or 4 mini loafs)

Bake at 350 for 55 to 60 minutes for large loaf or for 30-35 minutes for mini loafs.
